Pizza Dough

It is hard to believe that summer is almost over.  It has been a very busy summer.  We have had many of our son's friends over and they like to eat!!  One of the kids' favorites are calazones.  I had not made them in awhile but last week I made them and they were so good.  You can stuff them with anything that you like on a pizza.  The ones that I made last week had pepperoni and fresh mushrooms in them.   But be careful, the filling is hot and juicy!!  I bit into mine and mushroom juice burned my chin!!  A lesson learned!!  I make the dough mix and have it on hand all the time so we can have pizza or calzones in a few hours.

Dough Mix
8 c. bread flour
4 c. all-purpose flour
1 c. cornmeal
1/4 c. sugar
3 T. salt
3 T. baking powder
In a large bowl, whisk together flours, cornmeal, sugar, salt and baking powder very well.  Store in well sealed container.  Keeps 4 months.

To make pizza dough:
1 c. water, warm
1 t. fast-rise yeast  (for a fluffier, bread-like pizza, use 1 1/2 t. yeast)
3 c. dough mix
2 T. olive oil
This dough can be kneaded by hand, in a mixer with a dough hook or in a bread machine.  For the mixer, place water in a bowl with yeast.  Mix then allow mixture to sit about 5 minutes, to allow yeast to expand.  Add pizza mix and oil, then knead, until smooth and elastic on slow speed - about 5-7 minutes. Once dough is made, cover well with oiled plastic and allow to rest one hour.  Deflate before rolling out.  Will make 1 12" pizza.  Will make 3-4 calzones. 
To make the calzones, divide dough into 3 or 4 balls.  Roll out and add the fillings on one side and then fold dough over fillings and seal edges well.
