Chicken Fricassee with Dumplings

Chicken Fricassee with Dumplings is pure comfort food!!!  Served with a tossed salad or a vegetable and you have a complete meal that is delicious.  For those who are gluten intolerant, I have added intructions for making this recipe gluten-free.

Chicken Fricassee
1 cut-up chicken
   (you can use boneless chicken breasts if you wish)
2 c. baking mix with 1/2 t. rubbed sage added
    Dredge chicken in the baking mix and fry until golden brown in a large frying pan or deep-fat fry.  Set chicken aside.  Drain the grease and add 2 cans cream of chicken soup and 1 can milk, mixing well, making a gravy.  Add the chicken.  Bring to a gentle boil and drop the dumpling dough by spoonfuls.  Cook uncovered for 10 mins. and then cook, covered for 15 mins. 

Dumplings
2 c. baking mix
2/3 c. milk
1/2 t. sage
Mix well.

Note:  You CAN enjoy chicken and dumplings on a gluten-free diet thanks to Bisquick® Gluten Free mix. To make your own chicken gravy use 1 1/2 c. chicken broth, 1 c. milk and 2 T. cornstarch.  Heat the chicken broth to a boil.  Mix the milk and cornstarch together and add to the boiling chicken broth. 
To make the dumplings use 1 1/2 c. Bisquick Gluten Free mix, 2/3 c. milk, 4 T. melted butter and 2 eggs.

Turkey, Bacon & Ranch Wrap

Yesterday was my husband's birthday, so a belated Happy Birthday to him.  We went out to lunch at Applebee's and had a relaxing day.  It was nice to let someone else cook the meal for a change:-)  And as always it was very good - especially their brownie bites with a scoop of ice cream!!

Wraps are so easy and fast to make.  You can put about any combination of sandwich food you want into a wrap, just use your imagination.  You can use the large flour tortillas, or in the larger grocery stores you can find a variety of different wraps - garlic, tomato or spinach.  The wraps that I make are large and can serve 2 people unless they are big eaters.  If you serve 1/2 a wrap with a cup of soup, salad, fries or chips, it makes a great lunch.

Turkey, Bacon & Ranch Wrap
Build your wrap in the following order:
1 large garlic wrap or flour tortilla
3 - 4 oz. deli smoked turkey
3 slices bacon, cooked
3/4 c. shredded lettuce
3 slices tomatoes
1/2 c. shredded Cheddar cheese
1/2 c. Ranch Dressing (see post of 5/11/2011)
Place ingredients on center of wrap, leaving about 1 inch on the bottom so you can fold up.  After you have folded up the bottom, bring the sides over the ingredients like you are folding a letter.  Secure with a 4" frilled toothpick.If you are going to divide the wrap, leave about 1 inch at the top also, and fold down before folding sides, then use 2 toothpicks.

BBQ Sauce

Happy Birthday America!!  This great country of ours was founded "Under God".  As a country we need to get back to those principles!!  As a nation we are far from "Under God" and for our country to survive, it is imperative that we get back to God. 

Today I am going to give you a recipe for BBQ sauce in 2 different quantities.  This recipe uses the BBQ Rub that I posted earlier.  The first is going to be a smaller amount and the second a large amount so if you BBQ a lot then you don't have to make sauce too often.  We had BBQ ribs for supper and they were delicious!!  I first rubbed country style ribs with the BBQ Rub and grilled them for 2 hours on very low heat.  Then in the last 15 minutes I brushed on the BBQ Sauce, cooking on each side until the sauce was caramelized.  I basted the ribs on both sides 2 times. 

BBQ Sauce
       (smaller amount)  
2 cups catsup
1/2 c. brown sugar, packed
1/2 T. minced onion, dehydrated
1/2 t. Worcestershire sauce
1/2 T. liquid smoke
3/4 t. minced garlic, dehydrated
1 T. BBQ Rub
1/8 c. water
In a small, heavy saucepan, combine all ingredients.  Cook over low heat for about 15 minutes until thick, stirring occasionally.    Refrigerate leftovers.

          (large amount)
1 - #10 can catsup
3 c. brown sugar, packed
1/2 c. minced onion, dehydrated
3 t. Worcestershire sauce
4 T. liquid smoke
1/4 c. minced garlic, dehydrated
1/2 c. BBQ Rub
1/4 - #10 can of water
Follow the directions above, using a large pot and cooking long. 
This makes a nice, thick sauce that will stay on the ribs.
